It sharpens dull knives really quicklyI used this item over the course of 1 week. It sharpens dull knives really quickly. Hope it last a reasonable time. Will review again in awhile.The Ultimate Edge 10NC 10-Inch Coarse Diamond Sharpening Steel4WorksLike4Nice Sharpener. I use my knives every day and I don't like them dull. I only have one sharpener. If you want to remove a lot of metal, put on a bit of pressure and this sharpener will do the job. Barely touch the knife to the steel and stroke very gently to fine-tune. This performed better than I expected. 5works well but poorly builtFirst the good....this rod keeps my edges like razors.The bad....I was somewhat disappointed with the quality of the materials used in construction....everything from the plastic used in the handle to the grit itself. The entire piece just feels flimsy in your hand and i feel like if it slipped away from me and hit a hard floor it might break. The abrasive surface does an excellent job on my blades but for what little I use this piece, I already feel like it is wearing out and don't expect this tool to last long. And no...I don't abuse it when I use it.I don't want to be too negative. This rod does do a good job, there just might be better out there. It looks a little out of place in a block of high quality blades and will probably wear out sooner than you wish.3Fastest Sharpener in the West and can be used on glass as wellThis is not sharpening steel, it is an amazingly convenient sharpener. I keep my knives sharp. Over the years I have used the Laski system, hard and soft Arkansas stones, but finally settled on a diamond stone/plate. When I saw this "steel" i was intrigued. It is everything I'd hoped for. I run it under the water before each sharpening. When I am not happy with a knife, this steel is hanging right there. 10 seconds and the knife, big or little, is sharp again. Wicked sharp. As an additional benefit, the instructions noted that it can be used on glass. I have two 5 liter wide mouth Fido bottles that I use for fermenting kraut. Both had developed small chips around the rim under the seal. I was concerned that the chips might ruin the seal. I went to town on the rims of both bottles. This steel smoothed out the rims beautifully. I no longer worry about cutting my hand or ruining my kraut. It won't give you a polished edge on you knives or glass but it is a quick and effective compromise. 80% of what you need for 10% of the work. No sign of wear yet. I am guessing that if you wet it before each use and give it a quick wipe with a paper towel after using it, it will last indefinitely. My diamond "stone" has lasted for 15 years.5Great! Can't go wrong here. The best I've ever seen. Fine enough for honing and JUST coarse enough for all around sharpening. Plan to order other sizes and styles. 5All others are pretendersI have ceramic, steel, diamond. lots of hones. Toys next to this mother. Long, oval, right. The basis of my hone system. Higher grit, lower grit, strops. If you only want one in your drawer, this is it. You'll need a deep drawer.5Wore out in 10 monthsThis sharpened my knives well for a while; but I expected it to last for at least 2 years. I sharpen a knife with it about twice a week. The diamond coating wore off after 10 months of use (about 86 sharpenings) so that it would no longer sharpen. This means it cost me 43 cents every time I used the product to sharpen my knife. I think that is lousy. I will buy a DMT diamond rod next, and see whether that is more durable. If that does not last, maybe the EZE- Lap oval diamond rod would be durable. The search for a durable sharpening rod goes on.2A good sharpener Edited 12/31/2011: My son has finished his apprenticeship, and he is now the head butcher in our local grocery store. He still uses this to sharpen his best knives.My son is apprenticing under the tutelage of a butcher, and his mentor recommended an oval sharpener. My son says it works well for sharpening the knives he uses during his workday. 5Nice lightweight steelI prefer the flat diamond steel over the round type; much faster blade restoration IMO. I'm a personal chef and bought this to add to my traveling kit; it's not as wide as the one I have at home but it does the trick. I do what one of my culinary school instructors taught me; every time I use my knife I give it 5 strokes on one side of the blade, then 5 on the other. Then 4, and 4; 3, and 3, etc...good to go!4very very good so far.This is the first sharpener of this type for me. As with all sharpening getting right angle is important. The very fine diamond surface gives a good feel (feedback) so you can keep the angle more easily than with other sharpeners I have used. I just hope this thing lasts a while. Sometimes this sort of surface comes off too soon.5This was a gift to my sonHe was very happy to receive this knife sharpener and is very pleased with the results he gets when he uses it.5Excellent Sharpening Device I have used these for years in the kitchen and also for elk and deer hunting. The sharpener is small enough that you can carry it in the field when hunting and it also stores easily in the kitchen. I use only high quality knives and this sharpener keeps them razor sharp. I would recommend this to anyone who knows how to use a sharpening steel. The diamond works faster and better than any regular steel sharpener. 5Great edge tune upI ordered 2 Ultimate edges for friends since I already own myself. They used last ELk season and were thrilled with how well and quick edge was brought back to life when skinning animals. Brings edge back with just a few swipes. I've carried and used for years as go to knife tune up when skinning ELK or Deer. It is always in my pack with knives for caring for game. One caution clean knife edge of meat or lard before touch up do to diamond surface will plug up with crud. Soap, water & sponge cleans diamond surface very well. One note if the cook of the house uses the sharpener you may need to buy 2 if you want one in back pack. I keep one in knife drawer at home, better than regular steel.5
