the first being not bad, and the second and third tries becoming overcooked ...I purchased this because I wanted to learn how to make Tamagoyaki. My attempts in a round pan were underwhelming, the first being not bad, and the second and third tries becoming overcooked scrambled eggs.I researched what was available on Amazon and settled for this pan, and size, because it seemed to be well made, and it would work on both an induction plate and a regular electric top. Aside from the color, which I'm not fond of, but which is rather subtle in shading, this was the pan to get.I made an almost perfect Tamagoyai roll on my very first attempt with this pan. It was so much easier than trying to do it in a round pan. The eggs came out yellow, with no hint of browning, not overly moist nor dry, and well-formed. My new induction plate may have been a contributing factor, but I'm beyond pleased, nonetheless.Additionally, I'm glad I chose the large size. I usually do 4 eggs for myself, and 2 eggs for my wife. I can make them all at once in this pan and cut the Tamagoyaki into the proper portions for serving. If you're doing only 2 to 3 eggs, the small pan might be the better option. 5Toy not toolYou get what you pay for here. Good value for your dollar but it's not an everyday tool.I love making Japanese omelettes and this makes a good omelette in that manner. It's too small to cook for a family of four or dinner party but it is great for the money.Long term use confirms that the heated handle problem is real; I'm a dedicated cooking enthusiast and I've burnt myself on that handle a few times, once badly. Under long term everyday use the center of the pan warped convex, this is just not created for every day use.I will buy this again but I won't make the mistake of using it for anything but Japanese Omelettes. 4"New Teflon" = "GenX" by Chemours?I bought this pan in AUG 2018. I loved this lil pan. I used it daily to cook a lot of small foodstuffs, mostly eggs. I did originally purchase it to try my hand at tamagoyaki, which turned out great, only to find out it was a good pan to use on all sorts of other foods. Don't get me wrong-- it does what it is advertised to do. I give the Durability/Cleaning/Use all 5 s because it does deserve it.My 1 rating reflects that it uses "New Teflon nonstick coating" on its advertisement. This is more "CONSUMER BEWARE" when you see that sort of wording. It is NOT a hit on the seller, but rather the manufacturing and how it is promoting a cancer-causing chemical. Sure, non-stick appliances are very convenient, but at what costs?After it became painfully aware to us of how much DuPont/3M was poisoning 99% of the world with their "amazing" non-stick Teflon chemical called PFOA (aka "c8") thanks to a Netflix documentary called "The Devil We Know" (if you like to be educated, I highly recommend watching it), I've been rethinking everything that our health organizations have covered up, hiding how much damage this chemical continues to do with c8's "bio-persistent" form. It cannot be broken down or leave our bodies.I am unsure but am curious if this "new Teflon" technology that this TeChef pan advertises as using is simply the new "GenX" chemical created by DuPont's spinoff company: Chemours. If you google GenX (or check out the "GenX" wiki article), you'll see it stated there that "In lab tests on rats, GenX has been shown to cause many of the same health problems as PFOA."So this is *NOT* a better version of Teflon.If you want to try and lessen your exposure to more of these cancer-causing chemicals, then please watch that documentary and avoid buying anything made of Teflon, or this "new Teflon." It's been a huge eye-opener for us and I am simply trying to pass this knowledge around.If you value the convenience of non-stick technology over your health, then by all means, this is a great pan. 1So versatile and awesome!Seriously, this pan is fantastic! I've had it for a few days and I've already used it twice. Once for a rolled omelette and the other for a rolled crepe (pictured). I use a little bit of veggie oil when I cook with it, but the non stick is so good, you may not need it. It's dishwasher safe (I'll hand wash to keep it nice) and oven proof to 350. The color (dark purple) is so pretty and the cook is so even on it, and I have a crummy electric coil stove. It's small, but it's the perfect serving size when you do about 4 fill and rolls. I'm very much looking forward to all the other stuff I'm going to make! If you're on the fence, get it!! 5I was looking for good quality Tamagoyaki-panI was looking for good quality Tamagoyaki-pan, this one is not too heavy and just right size for making Tamagoyaki (Japanese omelet ). Nonstick, easy to clean. Just what i wanted! Make sure oil the pan good even it says Nonstick if you want to make perfect Tamagoyaki. 5Fabulous!A fabulous little pan that makes tamagoyaki making a cinch! I love how the non stick surface allows the egg to be rolled easily with a minimum of fuss. I've been making my mom omelettes on my day off about once a week each time the pan cleans up easier than the rest of the kitchen. Seems to be durable enough but I'm not exactly hard on my stuff. 5Excellent productThis pan is excellent! It's got a nice weight to it but not too heavy that it's hard to use; you can tell it's high quality. The nonstick coating is really nice too. I used a small amount of oil as my standard practice but nothing stuck to the surface! Please see picture of "atsuyaki tamago" (Japanese style fried egg) to see how well the pan worked for me. 5LOVE IT! Just like the one my mom used to use (even better)!I don't know why, but I never thought about looking for a (tamagoyaki) pan on Amazon. I was actually looking for something else, and the image/picture of this tamagoyaki pan popped up underneath. I am SO glad that I bought this pan, this is just like the one my mom used to use, or even better!I have a gas stove top, but the pan (according to the packaging - pictures attached) is good for all other surfaces. The pan is non-stick, and very easy to wash and rinse clean.I used a little bit of sesame oil to give my tamagoyaki extra flavor, added some salt & pepper, and green onions. I cooked the last layer the bit longer because I like it crispy on the outside. I am not a good cook (really, I am not...), but even I was able to make a very fluffy tamagoyaki. I am SO proud of myself thanks to the pan!I would recommend this product to anyone, buy with confidence! 5Great qualityI've used this pan for a couple months now and it still looks and works like new, no problems with the nonstick. I've only made tamagoyaki over medium heat, haven't exposed it to high heat so I couldn't say how it'd work for higher heat uses. But it works really well for what it is made for, and it's beautiful too.My favorite thing is that the (screws, rivets, whatever you call them) that connect the handle to the pan are also covered with the nonstick so egg doesn't get stuck around them like it does on my other pans. 5Perfect PanExcellent beyond compare. Go for the larger size. Not only does it make flawless omelets but you can also make very fine crepes to use as crepes or without sugar in the batter as a roll or manicotti or wraps. 5
