Three Tiny and Skinny LITTLE Loaves (Not Really Baguettes at All) Wow. Budabubba was right in his July 18, 201 review of the red version of this "baguette" maker. This is totally NOT a baguette maker. More like a Ficelle is right. These are three tiny, tiny, TINY, and skinny loaves.I'd probably need four of these to do what I had in mind. :)I'm going to give it a try anyway since I have a place in the country and any "baguettes" are a 40 minute drive away. Later I'll learn how to do the real deal without this "crutch."This is like doll house food sized. :) You've been warned. 3Your kid's fight over the bread today..and over the baker later! I've only made a couple batches so I'm still perfecting my technique to make them look pretty, BUT the bread was amazing. THE CRUST was crispy-crunchy and chewey all at once. Addictive! Read the instructions and generously flour the cylinders and don't let water glue the bread to the baker. That's important! Otherwise, they come out as if they were non-stick. I'm very happy with this purchase. 5Fabulous, but throw away the included recipes The bakers works beautifully, creating crispy baguettes with a lovely, chewy center, especially if you use artisanal flour. The only reason I did not give this 5 stars is because of the horrible recipe books included with the baker.Amounts/measurements were definitely "lost in translation" - for example, referring to a cup of water that is 7 ounces instead of 8. If you want to follow their instructions properly, use a household scale referring to the original French measurements, otherwise you'll end up with a sticky, useless dough.There's a good recipe over at the King Arthur Flour site that is meant to be used with this baker - and gives much better results than the translated mess in the book. A quick search of the Internet revealed a lot of issues with the accompanying book and some darn good fixes.Surf before using and you won't be disappointed. 4Followed their recipe - nice loaf of bread Followed their recipe - nice loaf of bread, but not crispy and crunchy. Tried my 5 minute bread recipe and cut it by 1/3, heated the pan, put foil in the holes on top, and got a decent, crusty loaf, but hard to raise the dough outside of the pan so that you could heat it. Also needed to use parchment paper to keep it from sticking. A lot of hoops and certainly not as easy as they describe. Liked the size and shape of the loaves. Still working out the bugs. 3Can t live without it! Making authentic French Baguettes in a home oven is a kind of suicide mission. Employed as the Estate Chef to a wealthy family who often entertain VIP s, the Emile Henry Baguette Baker was nothing less than a gift from the Almighty Himself. This baker perfectly replicates the steam-injected bread ovens I labored in as a youthful apprentice.The Baguettes shown here are sourdough at 63% hydration, each weighing 9 oz. 15-minutes at 465 followed by 12 minutes w/o the lid. For final browning I kick the heat up to 500 . To facilitate higher hydration (sticky dough) I line each well with a 3-inch wide strip of parchment paper.The family is so thrilled they insist on Baguette with every dinner. Can t say I blame them. 5I have used it several times and the baguettes still ... I have used it several times and the baguettes still stick a little bit. I have started using parchment paper. I hope the sticking stops over time- the instructions say it will. It took me a few tries to get the dough correct. Went back to my artisan dough recipe with a long ferment (18 hours or so) and I am getting the crust I like 4Works perfectly for amazing baguettes This is a great baguette maker and really the only one I've found that can get a crunchy crust on your baguettes. As you will see in other reviews it's impossible to stop these from sticking so just use parchment paper, tear a small piece for each baguette and save yourself a lot of headaches. I marked it down to 4 starts because they could do more to prevent sticking but also, it's hard to hold with oven mitts and one day I'm going to drop it. I also didn't follow their recipe, I used the King Author French style baguette recipe. It's a wet dough, don't be scared of that - use oil and water to prevent it sticking to your hands ;) See the pics, some are regular baguettes and the others have cheddar cheese and garlic salt added. Once they have cooled I actually toast them before eating, even the next day to get amazing crunch. 4Perfect French baguettes This makes the most incredible bread. I just think there are too many additives in store bought, and this is easy if you have a kitchen aid mixer. I limit my carbs, so they have to be great carbs...and they are with this Baker. The thought was I was going to freeze the extra loaves but they never last long enough to make it to the freezer. I can t believe it literally costs just pennies to make a loaf of bread. I am very happy with the quality of this product....and making bread at home. God, it sure beats those square box bread machine loaves from 15 years ago. 5Almost like French baguettes! The baguettes turn out very well! I have been baking bread for 40 plus years and this is the first time I have been able to achieve a light interior with a thin very crispy crust. The flour in the US is different, so I have been experimenting, so far my best results have been with an organic all purpose flour. If I can find a 55 flour for an affordable price, I will try that next. 5Five Stars Helps a lot with retaining moisture and achieving better quality baguettes, esp. when using a gas oven. 5
